Directions
Prepare the filling: Heat a pan over medium heat and add a small amount of oil. Sauté garlic and onions until softened. Add ground pork (and shrimp if using). Cook until the meat is browned. Stir in carrots, green beans, and cabbage. Cook until vegetables soften. Add soy sauce, oyster sauce, salt, and pepper. Stir to combine and cook for another 2-3 minutes. Remove from heat and let the mixture cool.
Assemble the Lumpia: Lay one lumpia wrapper on a flat surface. Place about 1-2 tablespoons of the filling near the bottom of the wrapper. Fold the bottom of the wrapper over the filling, tuck the sides in, and roll tightly like a burrito. Brush the edges with beaten egg to seal the roll. Repeat until all wrappers are filled.
Fry the Lumpia: Heat vegetable oil in a deep pan over medium-high heat. Fry the lumpia in batches until golden brown and crispy (about 2-3 minutes per side). Drain on paper towels to remove excess oil.
Serve hot with dipping sauce like sweet chili sauce or vinegar with garlic.
